This creamy and comforting dish is perfect for the entire family and makes great left overs! Filled with delicious seasoned chicken, plenty of cheese and flavorful jalapeños. These peppers may be small, but they pack a powerful punch of nutrition!

Here's how to make Cheesy Jalapeno Chicken Casserole...

Ingredients

  • 2 lbs boneless, skinless chicken breast (6 small breasts)
  • 12 oz softened cream cheese
  • 6 slices of bacon
  • ¼ cup mayonnaise
  • 3 fresh jalapeño peppers, (or can substitute for bell peppers)
  • 4 oz shredded sharp cheddar cheese
  • 2 oz shredded mozzarella
  • 1/4 cup hot sauce

*Feel free to remove the hot sauce as well as the seeds from the jalapenos if you are not a fan of spice!

Directions

  1. Pre-heat oven to 400F. Season chicken generously with salt and pepper. Bake for 40 minutes.
  2. While the chicken is baking, dice up your bacon into small pieces and cook in a pan over medium heat. Once crisp, add the the jalapeños.
  3. When the jalapeños become soft, add in the hot sauce, mayo and cream cheese.
  4. Remove the chicken from oven to let it cool a bit, then lay into your casserole dish
  5. Finally, spread the cream cheese mixture from the pan across the chicken and sprinkle the cheddar/mozzarella on top!
  6. Bake for 10-15 minutes at 400F. Remove from oven, let cool, slice & serve!
