These bites are the perfect combo of light yet satisfying. Creamy and flavorful, you’ll have trouble eating just a few! This snack comes together quickly with minimal ingredients and rather than a cracker, cucumbers offer a more nutritional base. Studies show that cucumbers are great for promoting better digestion, stabilizing blood sugar levels, and can even help prevent diabetes. This vegetable is also super hydrating, as it is actually made up of 96% water! To get the most nutrients, cucumbers should always be eaten unpeeled. The peel offers tons of fiber, as well as certain vitamins and minerals. Cucumbers are also a great source of antioxidants and help to block harmful free radicals.
