Thought pancakes were out of the picture on the Keto diet? Think again! These delicious cakes are made from coconut flour! Coconut flour is a great source of protein, fiber and healthy fat with low amounts of carbohydrates. Just one ounce of coconut flour contains 5g protein, 11g fiber, and 4g of fat!

The fat found in coconuts comes in the form of medium chain triglycerides. (MCT) Research shows that MCT’s can reduce body weight as well as waist circumference, while preventing obesity.

When swapping out traditional flour for coconut flour, you’ll need to know a few tips! 1/4 cup of coconut flour is equal to 1 ounce, when measuring coconut flour in a measuring cup it can actually yield less due to the flours fluffy texture. Another thing to note is liquid is key with coconut flour. Just always remember, for every 1 cup of water/1 cup of coconut flour, you’ll need 6 eggs.

Ingredients

  • 2 large Egg
  • 3 tbsp Coconut flour
  • 2 oz softened cream cheese
  • 2 tbsp Heavy cream or milk of choice (may have to add more milk to thin out the batter)
  • 1 tbsp Monk fruit sweetener, coconut sugar, or erythritol
  • 1/2 tsp Baking powder
  • 1/2 tsp Vanilla extract (optional)

Directions

  1. Mix eggs, coconut flour, cream cheese, cream or milk, sweetener, baking powder, and vanilla in a blender until smooth.
  2. Spray pan and put on medium heat.
  3. Spoon mix into pan and cook 1-2 minutes each side.
  4. Top with butter and sugar-free syrup!
