Sometimes all we want is a comfort meal, and comfort calls for soup! Typically soup recipes will call for chicken or veggie broth, but this recipe actually uses nutritious bone broth! Bone broth has no carbs, which already makes it a great choice for keto-dieters.

Not only does bone broth add delicious flavor to your soup, but it also helps to prevent the symptoms of the keto flu and is a great way to replenish the essential electrolytes you need in the body!

Bone broth also contains glutamine which has been known to help prevent and heal “leaky gut” which is associated with many chronic diseases such as irritable bowel syndrome (IBS), ulcerative colitis and Crohn’s disease.

Here's how to make Quick & Easy Broccoli Cheddar Soup...

Ingredients

  • 4 cups of broccoli florets
  • 3 1/2 cups of bone broth
  • 4 cloves of minced garlic
  • 3 cups of shredded cheddar cheese
  • 1 cup Heavy cream

Directions

  1. Over medium heat in a large sauce pot, cook garlic for about one minute
  2. Add the broccoli, chicken broth, and heavy cream.
  3. Increase the heat to bring to a boil, then reduce heat and simmer for 10-20 minutes, until broccoli is soft and tender.
  4. Remove a handful of the broccoli pieces and set aside (if you would like some pieces to top your soup with at the end)
  5. Use an immersion blender to puree the remaining broccoli.
  6. Change heat to low setting and add in the the shredded cheddar cheese 1/2 cup at a time, stirring consistently until melted. Puree once more until smooth.
  7. Remove from the heat and add the reserved broccoli on top of soup and enjoy!
